A pril’s Pie Company, located in downtown Fort Myers, Fla., is owned and run by Axel Rios Bonilla and his wife, Carolina, who purchased the restaurant in 2011. Although they are pleased to offer a wide selection of menu items, pies hold a special place in the couple’s heart, and their list of 40 mouth-watering pie varieties is proof. In addition to pies, the restaurant also serves up a tempting menu of mini, cakes, cookies, macaroons, and rum balls, and provides custom desserts upon request.
Savory menu items include soups, sandwiches, salads, and tacos. The Cuban sandwich and savory pork dish are particularly popular with diners, and Bonilla prepares the slow roasted pork following his special recipe to rave reviews. April’s Pie Company also provides catering services.
Axel & Carolina
Serving up delicious treats with fine hospitality has come naturally to April’s Pie Company Owner Axel Rios- Bonilla.
Axel was born in San Juan, Puerto Rico in 1985 to a family where food played a role in daily life. “From my earliest memories, I recall sitting at the counter in my grandmothers’, Candy and Nereyda’s kitchens while they were preparing Puerto Rican specialties such as roasted savory pork, and desserts such as Tres Leches, (cake soaked in three different milks), flan and rum cake. I was always there, anxiously waiting to taste each dish they made,” Axel said.
These experiences made such an impression that Axel decided to make culinary arts and hospitality a career. He studied at the prestigious Culinary Institute of America in Hyde Park, N.Y., earning a bachelor’s in culinary arts management. Upon completing his education, he served in various restaurant managerial positions at hotels including the Hyatt Regency.
Today, Axel owns April’s Pie Company in Fort Myers, which he and his wife, Carolina, purchased in 2011. His role includes overseeing the creation of all dessert and savory items, menu selection, restaurant operations and catering. Carolina handles management and financial operations.
April’s Pie Company boasts over 40 varieties of made-to-order pies, including coconut cream, blueberry crumb, pistachio chocolate, whipped key lime and guava & cheese. As if pies weren’t enough, April’s also creates artistic cakes and tortes such as their Bacardi 8 rum cake, red wine fruit torte and exquisite confections like coconut macaroons, chocolate dipped rum cake balls and Parisian Macaroons. They also offer specialties such as slow roasted savory pork and Cuban sandwiches.
The newest additions to April’s dessert menu are “Pie Bites,” bite-sized versions of their delicious pies. They are a treat for guests at events and festive occasions. Pie bite flavors include apple crumb, coconut cream, chocolate smores and strawberry rhubarb.
